This cheese is matured with Trèfle Noir, the famous beer from the microbrewery of the same name located in Rouyn-Noranda, Quebec. Its name, Du-Charme, is a homage to its creator Jacques Ducharme, a cheesemaking consultant. The black beer used to ripen the cheese is none other than the Trèfle Noir of the Le Trèfle Noir microbrewery located in Rouyn-Noranda, Abitibi. It has a sweet flavor with notes of hazelnut cream and a subtle beer taste on the finish.
