Winner of numerous awards in Canada and made from unpasteurized sheep milk, our Allegretto cheese has a linen rind that is orange-brown in color. It is yellowish and has a good consistency. Its texture is firm and crumbly. With its sweet and saline flavors and its discrete notes of sheep milk, it is enjoyed with raclettes or flaked in pasta and salads.
