What is Garlic Scapes?
The garlic scapes have a milder and lighter taste than garlic and don’t have the bad sides of garlic's bulb. The garlic scape is, actually, the central stem that extends from the garlic bulb. It turns on itself while growing up. It’s harvested by hand when it makes two turns. Containing a small amount of allicin, it has the advantage of having a delicate fragrance and being more digestible than garlic itself. Even raw, it remains easy to digest and has no effect on the breath.
